It bring back us to my childhood memories. Earlier plum cakes were only available during Christmas time. I love plum cakes and decided to make them for this Christmas. When I make this cake my daughter asked me why it is called plum cake as we are not using any.

Steps to make Christmas Plum Cake:
  1. In a bowl take the fruit juice & add all the dry fruits & mixed dried fruits. Mix everything well and let it soak it for at least 3 to 4 hours. You can even used "Frooti" as a substitute for fruit juice.
  2. Now pour milk in a small bowl & add vinegar to it. Mix it and keep it aside. Your buttermilk would be ready in some time.
  3. Now for caramel syrup, take a pan & add 1 tbsp of sugar & 1 tbsp of water to it. Let it boil on a low flame until it turs golden brown in colour. Now add 4 tbsp of warm water to it & mix it well with the caramel sauce. Boil it once. Your caramel syrup is now ready. Then let it cool down completely.
  4. Now in the dried mixed fruits & nuts, soaked in orange juice, add 1/4th cup of powdered sugar & mix everything well. Then add caramel syrup into it then again give it a mix.
  5. Now keep the strainer over it & add maida, baking powder, baking soda, milk powder, cornflour, cinnamon powder, cardomom powder, ginger powder, kesar strands & strain everything. Then give everything a good mix.
  6. Now slowly and gradually add previously prepared buttermilk to it. Mix everything well with fold and cut method. Then add melted butter to it & mix it well with the batter.
  7. Finally add vanilla essence to it & give everything a good mix.
  8. Now for pre-heating, take a kadai for pre-heating with it's base covered with salt and a stand over it. Cover it and pre-heat the kadai for 3 mins on high flame and then 7 to 8 mins. on medium flame.
  9. Now grease a 6 to 7 inch cake tin and add the batter into it. Dab it twice so that the air bubbles gets off. Now place it over the stand & immediately cover the kadai & bake it on a low flame for about 60 to 65 mins.
  10. After 1 hour of baking, check it by inserting a toothpick, if it comes out clean then your cake is done. If not you can keep it for 5 to 10 mins more.

I love plum cakes and decided to make them for this Christmas. When I make this cake my daughter asked me why it is called plum cake as we are not using any. Plums, chocolate and hazelnut - this is a cake that really celebrates the season.
