The ingredients needed to make Vegetable Quinoa:
  1. Make ready 1/2 cup quinoa
  2. Take 1 cup water
  3. Get 1 tsp olive oil
  4. Prepare 1 tsp turmeric powder
  5. Get 1/2 tsp black pepper powder
  6. Make ready 1/4 cup peas
  7. Prepare 1 carrot, round slices
  8. Take 1/4 cup coloured bellpepper, finely chopped
  9. Make ready 1/2 cup broccoli, florets
  10. Make ready 1 onion, sliced
  11. Prepare 1 green chilli, finely chopped
  12. Take 2 garlic, finely chopped
  13. Take 1/2 tsp cumin seeds
  14. Prepare 1 sprig curry leaves
  15. Take 1 tsp olive oil
  16. Get to taste Salt
  17. Prepare 1 tsp coriander powder
Steps to make Vegetable Quinoa:
  1. Soak quinoa into water for 5 min. Now transfer it into strainer and wash thoroughly for 3-4 times with water.
  2. Now heat a pan on medium flame, add 1 tsp oil and then quinoa. Keep stirring for 2 mins or until you hear popping sound.
  3. Add water, turmeric and black pepper, give a good stir. Turn flame to the lowest, cover it with lid and let it cook for 12 mins.
  4. After 12 mins, turn off the flame and keep it covered with lid for minimum 5 mins.
  5. Heat a wok, add 1 tsp oil, then garlic and cumin seeds, sauté for few seconds.
  6. Now add curry leaves, green chilli and onion and sauté for another 2 mins.
  7. Add carrot, peas, capsicum, broccoli and saute for a min.
  8. Lastly add coriander powder and salt to taste. Mix well for a min.
  9. Add the cooked quinoa and slightly toast everything for a min.
  10. Serve hot or with chutney.
