The ingredients needed to make Tamarind chutney (sweet and sour sauce):
  1. Take 1 tamarind *
  2. Take 1/2 Tablespoon jaggery
  3. Make ready 6 dates
  4. Prepare 1/2 Cup water
  5. Take 1 Teaspoon Ginger paste
  6. Take 1/2 Teaspoon Green chilli paste
  7. Prepare To Taste Salt

Strain this mixture by passing it through a sieve and collecting the liquid in a bowl placed under the sieve. Soak the tamarind (without seeds) in two cups of warm water for half an hour. Extract pulp and strain to remove fiber. Heat the oil in a heavy-bottomed pan.

Instructions to make Tamarind chutney (sweet and sour sauce):
  1. For tamarind, remove its hard cover and soak it in hot water(2 tbsp water) for 1 hour and then use it with water
  2. Boil tamarind, jaggery, dates and water in a pressure cooker till 1 whistle
  3. Let it cool down for 20 minutes
  4. Filter the tamarind boiled mixture using bowl /steel pan base as net (as shown below) and put a pan below to collect the filtered liquid
  5. Press it with spoon or hand inside the net to take most of the paste out of the mixture
  6. Add ginger – chilli paste to the filtered liquid and mix it well
  7. Add salt to taste and chutney is ready

Extract pulp and strain to remove fiber. Heat the oil in a heavy-bottomed pan. Add Five spices/Panch Phoron, bay leaf, whole red chilli and hing. When the seeds starts spluttering add the tamarind pulp,sugar, salt, cashew, raisin and dried dated. Change the quantity of jaggery according to your taste.
