  2. SCOOP - - Use a tablespoon measure to scoop, place heaping spoonfuls into hand - - Gently shape into ball and place on clean plate
  3. FRY - - Fill cast iron or Dutch oven etc with 3/4 inch of oil - - Heat on high until oil is 375°F - - Carefully lower balls one at a time leaving space so they don't stick - - Cook undisturbed until well browned on bottom sides - - Flip with fork until browned on second side ~4 minutes total - - Transfer to paper towel-lined plate and season immediately with salt
