  1. toast the nuts in a pan dont use oil and watch very closely as not to burn
  2. except for olive oil put all ingredients into processor blend till coarsely chopped then drizzle in olive oil

Add the pine nuts and toast them for a few minutes until browned and fragrant. Place the parmesan chunks in a food processor and add the basil. Peel the garlic, then pound in a pestle and mortar with a pinch of sea salt. Pick, roughly chop and add the basil leaves, then bash to a paste (or pulse in a food processor). Add the pine nuts (very lightly toast first, if you like) to the mixture and pound again, then stir in half the Parmesan.
