The ingredients needed to make Pumpkin Corn Soup:
  1. Take 350 grams Pumpkin cut into cubes
  2. Make ready 150 gms Boiled corn

  5. Prepare 1 tspn olive oil or butter
  6. Take 1/2 tsp Black pepper powder
  7. Make ready 1 tsp Salt
  8. Take 4 Cups vegetables stock
  9. Take 1 Cup coconut milk
  10. Make ready 1 tsp Pumpkin seeds for garnishing
  11. Make ready 1/2 tsp Cream for garnishing

Stir in pumpkin & blend well. Cook & stir until thoroughly heated, but DO NOT BOIL. Heat olive oil in a large pot over medium heat. Stir chicken broth into leek mixture; bring to a boil.

Instructions to make Pumpkin Corn Soup:
  1. Heat 1tsp butter or olive oil in a non-stick pan, then add chopped garlic and saute, after few seconds add chopped onions and fry them until it's light golden brown in colour.
  2. Now add pumpkin cubes and boiled corn and mix it very well. Then add salt and pepper powder. Fry it for 2-3 minutes. Then add 4cups vegetable stock, mix it well and cover it with a lid for 10 minutes. After 10 minutes then add 1 cup coconut milk. Then cover it again and simmer until soft.
  3. Now switch off the flame and use a hand blender and mix until smooth. Pumpkin soup is ready. Garnish with some pumpkin seeds and fresh cream.

Heat olive oil in a large pot over medium heat. Stir chicken broth into leek mixture; bring to a boil. In a large saucepan, mix all ingredients. Freeze option: Freeze cooled soup in freezer containers. To use, partially thaw in refrigerator overnight.
