The ingredients needed to make Risotto:
  1. Get 1 cup areorio rice
  2. Prepare 3 cup brown stock
  3. Get 2 each challot

Enjoy springtime in a bowl with a vibrant. Peel and finely chop the onion and garlic, trim and finely chop the celery. Add the rice and turn up the heat. Add risotto rice - such as arborio,carnaroli or vialone nano - and fry until translucent.

Steps to make Risotto:
  1. heat sauce pan on medium low heat and add olive oil
  2. then add challots and garlic and sweat for 45sec
  3. add in rice and stir it around
  4. then add white wine and let reduced
  5. when reduced add first stage of liquid(1cup) then constantly stir until absorbed
  6. then add thyme and second stage of liquid until well absorbed
  7. then add third stage
  8. once it starts to absorb add parmesan cheese and butter
  9. at the end add parsley

Add the rice and turn up the heat. Add risotto rice - such as arborio,carnaroli or vialone nano - and fry until translucent. Add wine if using, stirring continuously until absorbed. Add a ladleful of hot stock, cook over a medium heat and keep stirring until all the stock is absorbed. Repeat this until all the stock has been used, the rice no longer has a chalky core and the risotto is thick and glossy.
