  1. Make ready 500 gm Bhindi /Bhendi/okra/Ladyfinger
  2. Take 1 small onion sliced
  3. Get 1-2 Green Chillies chopped diagonally (optional)
  4. Make ready 1 Tomato chopped
  5. Make ready 3-4 tbsps Mustard oil or any veg oil you prefer
  6. Make ready 1 generous pinch of Paanch Phoron/ Five mix spice (see recipe)
  7. Get 1 whole dry red chilli
  8. Make ready 1/2 Tsp Ginger powder
  9. Prepare 1/4 tsp Turmeric powder
  10. Prepare as per taste Salt
  11. Make ready 1/2 Tsp- 1 tsp Roasted Cumin and coriander seeds powdered
  12. Make ready 1-1.5 Tsp Aamchur powder/ Dry Mango Powder

It goes well with plain rice, roti or even as a side with plain rice and dal. It also goes well in the lunch box. Since it is a dry curry it can also be used as a filling to make. Bhindi Ki Bhujia is a very common green vegetable that is cooked all over the Indian Subcontinent.

Instructions to make Bhindi Bhaaji /Bhendi ko Tarkari/ Bhindi Sabzi:
  1. Wash & Prepare the okra/ bhendi as seen in the pic….cut both the ends,from the stalk part cut it vertically/ lengthwise (twice) but don't cut fully but keep the length intact. Peel and chop/ slice the onion, tomato and Chillies.
  2. In a kadai heat the mustard oil and once it starts smoking add in the Whole dry Chilli (you can break into 2-3 pieces too) and the Paanch Phoron, then add the onion, saute and add the bhendi, no need to brown the onion. Add salt as per taste and mix and saute for 2-3 minutes, then add the tomato and chilli & mix and saute for 2-3 minutes. Add in the ginger powder and turmeric powder too. Cover and cook on low to medium flame for 10-15 mins or till the bhendi gets soft and cooked.
  3. Stir in between do that it doesn't burn and stick at the bottom. Once the bhendi is cooked, add the roasted Cummin and coriander seeds powder and Aamchur powder and mix well. Your Bhendi ko Tarkari / Bhendi Bhajiya is ready to be served. Bon Appetit!!!

Since it is a dry curry it can also be used as a filling to make. Bhindi Ki Bhujia is a very common green vegetable that is cooked all over the Indian Subcontinent. Stir gently until the whole masala mixture coats both the potatoes and okra.
