This is our recipe for making Nyonya Chang, a type of chang or Chinese dumpling. Also called Pnua Kiam Tnee 娘惹粽, the Nyonya Chang is popular among the Baba Nyonya communities of Penang and Malacca. It is usually served as an afternoon snack. There are local variations to the Nyonya Chang.
Instructions to make Nyonya Chang:
- Soak rice for 3 hours then fry with garlic and salt
- Steam pork and finely chopped
- Fry shallots till soft, add garlic
- Add in all chopped ingredients (candied melon last) then seasonings.
- Put a piece of pandan leave before laying thin layer of rice follow by a big heap spoon of fried ingredients
- This makes approx 50 dumplings
It is usually served as an afternoon snack. There are local variations to the Nyonya Chang. In Malacca, it is customary to dye the glutinous rice with bunga telang (butterfly pea flower. Nyonya changs are different from the rest due to the candied winter melon and coriander powder used to make the filling. Minced pork belly was also used for this recipe instead of finely diced pork.
