  17. Prepare 2 tablespoons toasted coconut, 2 teaspoons sunflower seeds, Extra fresh Coriander & Chilli flakes

  4. Now stir in the lentils and aubergine (add a splash of hot water here if needed) and let gently simmer for a further 5-7 minutes.
  5. Remove from the heat, stir in the cream (or plant based alternative) and chopped coriander. - *Top with extra coriander, toasted coconut and sunflower seeds.
  6. Serve straight from the pan at the table with some flatbreads, mango chutney and a sprinkle of chilli flakes if you need a hit of spice.
