Spoon the chocolate over the truffle until well-coated. Place on the baking tray, then chill. Snap the chocolate into small pieces and place in a heatproof bowl. Pour the creamy mixture over the chocolate, whisking as you go, so the chocolate slowly melts.

Steps to make Chocolate Truffles:
  1. Place 10 ounces of chocolate and butter in medium size glass mixing bowl. Microwave for 30 seconds. Remove and stir, and repeat one more time. Set aside.
  2. Heat the heavy cream and corn syrup in a small saucepan over medium heat until simmering.
  3. Remove from the heat and pour the mixture over the melted chocolate mixture. let stand for 2 minutes.
  4. Using a rubber spatula, stir gently, starting in the middle of the bowl and working in small circles until all chocolate is melted and smooth.
  5. Gently stir in brandy. Pour into 8x8 glass baking dish and refrigerate for 1 hour.
  6. Put cocoa, nuts and coconut each in own pie pan or bowl. Set aside.
  7. Place 8 ounces into a medium mixing bowl on top of heating pad set to medium. Adjust heat up or down to get chocolate to 90-92 degrees F. Dot no allow chocolate to go above 94 degrees F.
  8. Remove the truffles from refrigerator and shape into balls by rolling in palms of your hands.
  9. Dip an ice cream scoop into melted chocolate and turn upside down to remove excess.
  10. Place truffles one at a time into the scoop and roll around until coated.
  11. Then place the truffle into one of dishes to coat. Leave truffle in coating for 10-15 seconds before removing.
  12. Remove truffle to parchment lined sheet pan. Repeat until all truffles are coated.
  13. Allow to set in a cool dry place for at least an hour, or store in an air tight container in the refrigerator.
  14. Serve at room temperature.

Snap the chocolate into small pieces and place in a heatproof bowl. Pour the creamy mixture over the chocolate, whisking as you go, so the chocolate slowly melts. If the mixture splits slightly, don't worry, you can bring it right by adding a splash of boiling water. Add a pinch of sea salt. then stir in the brandy.
