  5. In another bowl take cream cheese at room temperature and beat it with electric beater. Add in powdered sugar, vanilla essence and lotus biscoff spread and beat until smooth and creamy.
  6. Add 1 cup whipped cream and beat for a minute until everything is mixed well.
  7. Pour cheese mixture on top of the cookie crust, smooth the top and refrigerate for at least 6 hours or overnight.
  8. Take 1/4 cup Lotus biscoff spread in microwave safe bowl and microwave it for 30 sec until the spread is runny. Beat with a spoon to smooth out the spread and the spread should not be at room temperature before spreading on the cheese cake.
  9. Take out the cake tin from the refrigerate, with the help of bunt knife loosen the edges and take the cake from the tin. Place it on a plate and spread the melted biscoff spread evenly over the surface and around the edges to get the drip effect. Decorate with crushed cookies and place 1 cookie on the top. Put back cheesecake in the refrigerator for at least 10 mins.
  10. Fill the whipped cream into piping bag and write your message. Slice it, serve and enjoy.
