My family (& especially my dad!) just love it. I used whole milk and the filling is so creamy - really delish! I increased the coconut to one & a half cups and felt it had plenty of coconut taste. In small bowl, beat half-and-half and egg yolks with whisk.

  4. For Layer 3: Beat with electric beaters the pudding and the milk until thick. Spread over the cream cheese layer.
  5. For Layer 4: Top the pudding layer with the 1 cup Cool Whip and then sprinkle on the toasted coconut on top.
  6. Refrigerate for at least 2hrs. But over night is best!!
