  2. Make ready 200 gms urad dal, washed & soaked for 2hours 30mins

To make South Indian Style Dahi Vada, make the batter for the vada in the same manner as mentioned below. While shaping the vada, just make a hole in the centre of the vada and then fry as mentioned. Soak the fried vadas in hot milk. For the curd mixture, whisk the curd until smooth.

Steps to make DAHI VADA (South Indian Style):
  1. For the batter
  2. Drain the soaked dal, add green chillies. Grind them in a mixer with help of very little water to a fine paste
  3. Transfer the dal paste in a bowl, add salt & mix thoroughly till light and fluffy
  4. Spread little dal mixture on left fingers & dip a finger in water to make a hole in between the mixture. Transfer the spread on wet right fingers & then put it in hot oil for deep frying
  5. Fry on medium, stir occasionally, till the vadas get a golden color
  6. Put these hot vadas in salted water for sometime. Take them out & squeeze gently in-between palms to remove any water
  7. For the yoghurt
  8. Strain the curd. Add sugar & salt. Add grated coconut. Mix well. Add the drained vadas in the ready dahi
  9. FOR THE TEMPERING Heat oil in a ladle. Add mustard seeds. As they start to splutter add whole red chillies, curry leaves, green chillies.
  10. FOR THE GARNISHING Sprinkle red chilli powder & spread the tempering. Serve cold.

Soak the fried vadas in hot milk. For the curd mixture, whisk the curd until smooth. Add ginger and green chilli paste, chopped coriander, salt and sugar and whisk well.
