The vada pav recipe is made of a spicy potato filling deep fried in a gram flour batter. Along with a hot and spicy garlic chutney, batata. Vada pav basically has Batata vada which is sandwiched between two slices of a pav (dinner roll) topped with sweet chutney, green chutney, and dry garlic chutney. Batata vada are fried batter coated potato dumpling fritters.

Instructions to make Vada pav:
  1. Heat a pan,add oil,mustard seeds,asafoetida,curry leaves,ginger garlic green chilli (chrushed in grinder make thecha / khucla.) turmeric powder,potato and mix well.now add salt and coriander leaves in the mixture,mix well and keep aside.
  2. Now for batter in a mixing bowl add gram flour,turmeric powder,red chilli powder and salt to taste and make thick consistency batter with required water.
  3. Now make medium size balls of potato mixture and dip in Besan batter and fry them till golden brown. - Fry the slit green chilli.
  4. For green chutney add all the ingredients in grinder and grind them,chutney is ready.
  5. For dry red chutney roast all the ingredients one by one,grind them and then add salt and Kashmiri red chilli powder,chutney is ready. (or can see my vada pav chutney recipe
  6. Now assemble the vada pav by sliced the pav in half apply green chutney inside the pav in both portions then add dry red chutney and place potato dumpling inside the pav,our Mumbai style vada pav is ready to serve,garnish with fry chilli and enjoy.
