Add veg stock, soya sauce, salt and sugar and stir until mixture boils. The recipe as shown here is for yellow curry noodles, but you can easily make green or red curry noodles! To do so, simply replace the yellow curry paste with green curry paste or red curry paste. As an alternative, you can use Lemongrass Ginger Paste or Panang Curry Paste for a unique spin!

Steps to make Curry noodles:
  1. Chop the red onion and garlic. Mix the curry powder with some water.
  2. Heat up cooking oil, sauteed the chopped onion, garlic, curry leaves, cinnamon stick and star anise. Once fragrant, add in the curry powder which already mix in water.
  3. Once the mixture is looking nice, add in chicken,fish balls and prawn. Mix it well.
  4. After 3 minutes, add in coconut milk and water. Let it boil and simmer for 15 minutes. Padd salt and sugar to taste. Make sure not to split the coconut milk. Once cook,turn off the stove.
  5. Pepare the noodle. Put it in hot water for 30 seconds. Drain the water.
  6. Put the noodle in a bowl. Put in the curry broth. Garnish with bean sprout,boil egg, chilli and fried onion.

To do so, simply replace the yellow curry paste with green curry paste or red curry paste. As an alternative, you can use Lemongrass Ginger Paste or Panang Curry Paste for a unique spin!
