  10. Get 2 Cups Peas
  11. Take 1/2 lemon juice
  12. Make ready Handful coriander

Place the olive oil in a large, wide pan over a medium heat. Add the onion to the pan and gently cook for a few minutes to soften the onion. Add the garlic to the pan.

Steps to make Vegan Chorizo Paella:
  1. Cook the sausages in the oven according to the packaging (usually 20mins). Meanwhile dice the onion, pepper and garlic.
  2. Add the diced veg to an oiled pan on medium heat and cook for 10 mins until the onion browns. Boil the kettle to make 700ml of vegetable stock (normally 2 cubes)
  3. When the sausages finish cooking, slice them up and set aside for later.
  4. Add the paella rice to the pan and cook for a further 5 mins. Then mix the tomato puree, Moroccan spices and paprika
  5. Next, add 400ml of the vegetable stock and stir into the rice. Keep adding water slowly as the water is absorbed until the rice is soft to eat
  6. Mix in the frozen peas, lemon juice, coriander and slices of chorizo and cook for a further 5 mins
  7. Serve up and enjoy!

Add the onion to the pan and gently cook for a few minutes to soften the onion. Add the garlic to the pan. Heat a tbsp of oil in a paella/large frying pan on medium heat. Transfer the chorizo pieces to a bowl and save for later. Pour a little more oil into the pan and add the finely chopped onion.
