The ingredients needed to make Tzatziki Sauce:
  1. Prepare Container of 1 Greek Yogurt
  2. Get 1 Cucumber Large , diced
  3. Prepare 2 Tablespoons Lemon Juice Fresh
  4. Make ready 1 Clove Garlic , minced
  5. Prepare 1 Tablespoon Dill Fresh
  6. Take Kosher Salt (to drain moisture from cucumber)
  7. Prepare To Taste Salt
  8. Prepare To Taste Pepper

Transfer to a separate dish, cover and refrigerate for at least one hour for best flavor. Coarsely grate the cucumber, sprinkle with a pinch of salt and squeeze out all the liquid. Tip into a bowl with the yogurt, garlic and mint, and mix well. Great served with slow roast lamb or as a dip.

Steps to make Tzatziki Sauce:
  1. Peel cucumbers and slice vertically so that no seeds are included.
  2. Put the slices in a colander and sprinkle with kosher salt, which will remove the moisture. Cover with a plate or something heavy. Let sit for 30 minutes. Drain well and wipe dry with a paper towel.
  3. Dice the cucumber slices and place in a food processor along with the garlic, lemon juice, and dill. Process until well blended. If the mixture is watery, use a very fine mesh strainer to remove excess water. Put back into the food process and add the yogurt. Blend well.
  4. Add additional salt and pepper as needed. Place in refrigerator for at least two hours before serving so flavors can blend.

Tip into a bowl with the yogurt, garlic and mint, and mix well. Great served with slow roast lamb or as a dip. This is the cool and creamy sauce that usually is served as a condiment on Greek Gyro sandwiches. The recipe calls for the thicker, Greek Yogurt, also called, "Greek Cheese". If you can't find this type of yogurt, you can use plain, regular yogurt from the grocery store.
