  3. Refrigerate for an hour or so before serving. Store any remaining tzatziki in the fridge, tightly covered, for 3-4 days.

Give it a stir, and leave to drain for a few hours, or overnight in the fridge. This is the cool and creamy sauce that usually is served as a condiment on Greek Gyro sandwiches.
