  4. Roast filet of beef 1 1/4 - 1 1/2 hrs, until temp registers 125F in center for rare, and 135F for medium rare.
  5. Cover filet with foil and allow to rest 20 min. Slice thickly ad serve warm or at room temp.

Use an oven thermometer to be sure your oven temperature is accurate. Place the filet on a sheet pan and pat it dry with paper towels. Brush the filet all over with the oil, reserving about half a tablespoon. Sprinkle it all over with the salt and pepper. I have found the perfect way to cook beef fillet!
