Instructions to make Egg shakshuka:
  1. Take a pan, add oil, add chopped onion, saute.
  2. Now add salt and mix. Saute till brownish. Add chopped tomato. Mix and saute all together.
  3. Next add turmeric and mix. Next add fresh green chillies.
  4. Add sweetcorn and mix all. Cover and cook till tomato becomes mushy and sweetcorn becomes plumpy. Add little water if required.
  5. Next add sugar and mix. Add chopped spinach and mix. Next add all-purpose seasoning (instead of this you can add finely chopped garlic cloves). Next add red chili powder and mix. Let spinach get cooked a bit.
  6. Next make a flat base into which you have to make small pockets depending upon the number of eggs you want to break. Carefully break one egg into each pocket.
  7. Put black pepper powder on each egg. Sprinkle salt and mixed herbs.
  8. Garnish with coriander leaves on each egg. Cover and cook for sometime. As it's cooked, sprinkle garam masala to give that Indian touch.
