Skim fat from top of stock. Remove skin and bones from chicken and cut meat into bite-size pieces. Return stock and chicken to pot and stir in carrots, sliced celery, onion, dried parsley, salt, pepper and rice. A very easy soup the whole family will love.

Instructions to make Rice and Chicken soup:
  1. Sauté onion, garlic(half of the minced) and ginger
  2. Add chicken and season with a bit of salt and pepper. Sear until a little brownish
  3. Add rice. Cook for 1minute
  4. Add half of the chicken broth. Keep stirring, you don't want the bottom burned
  5. When the broth is absorbed, add the rest of the chicken broth. Cook until the rice is cooked well.
  6. In a separate pan, fry half of the minced garlic til golden brown
  7. Serve in a bowl. Garnish with onion leaks, fried garlic and lemon. Squeeze lemon for a better taste.

Return stock and chicken to pot and stir in carrots, sliced celery, onion, dried parsley, salt, pepper and rice. A very easy soup the whole family will love. Perfect if you have leftovers and little time! Place the chicken carcass, onion, carrot, stock cube and herbs in a large saucepan. Drain through a colander over a large bowl and remove all the bones and skin.
